The leaves of young fenugreek plants, these are used as a vegetable and treated much like spinach. They have a mildly bitter flavour. Strip the leaves off the stalks as the stalks are often tough. English spinach leaves can be used but will not give the same flavour. Available fresh or dried, from Indian food shops.
