Replacing eggs is the most challenging part of friendly cooking, as they have so many roles in a recipe, from aerating, emulsifying and binding to adding moisture and colour. These recipes have been created to reproduce the different functions of egg, so it wouldn’t be possible to add eggs into the recipes in this book. The only exception would be to use a conventional egg wash instead of the alternative given.
