How to make emergency cupcakes

When you’ve got virtually nothing in the larder, you’ll still be able to make these wonderful little cupcakes (makes about 12 standard size or around 24 mini cupcakes). Preheat the oven to 190°c. Combine 110 g of plain flour with a pinch of salt, 1½ teaspoons of baking powder and 50 g of caster sugar. Pour in 150 ml of water and 40 ml of oil, mix well, then add half a teaspoon of vanilla extract or other flavouring if you wish. Pour the mixture into cupcake cases and bake for 10-15 minutes if they are mini, 20-25 minutes for regular. Decorate with water icing (125 g of icing sugar mixed with 15 ml or 1 tablespoon of water) and sprinkles.
