There are many types of flavored salts available, some infused with spices and aromatic ingredients such as vanilla or lemon peel, some with naturally occurring flavor and beautiful colors. Hawaiian sea salts come in the red alaea variety and the Hiwa Kai black variety. Volcanic red clay imparts a reddish hue and earthy flavor to the alaea salt, which is used in the preparation of the famous Kalua pork of Hawaiian cuisine. Hiwa Kai gets its color and flavor from charcoal.

Another salt from India, Himalayan pink salt, or sendha namak, is noted for its light pink color, which comes from minerals. This salt has become popular for unproven health benefits, but it’s a delicious salt with a pretty pink hue that’s good for general use.
