Fieriness Scales

There are several different types of scales used to compare the level of heat produced by some of the fire-boosting ingredients. Since no machine can actually measure the human perception of taste, most measurements are based on responses from people in taste test groups. The pyruvate scale is calculated based on measured amounts of specific components.
