  • About

The terms busiati and maccheroni inferrati are used interchangeably to describe two distinct forms of pasta made in almost identical manners. For some semblance of clarity they have been listed separately – under busiati you will find a description of a telephone-wire shape. Here is a different, almost tubular version. Both are specialities in Sicily and Calabria.
