Sinye means ‘baking pan’ or ‘vessel’ in Arabic. It is a one of the most famous local Galilean dishes, and is made of minced meat or chicken kebabs, known as kubbeh, drenched and baked in tahina. Individual cooks often choose to add parsley, chickpeas and tomatoes to the dish, together with an array of spices for an enhanced flavour.
