Also known as continental lentils, these can be pale or mottled green-brown with a glossy exterior and take the longest to cook of all the different types – 45 minutes or more – but they keep a firm texture after cooking. They are perfect for using in soups, casseroles, vegetable bakes and stuffed vegetables.
