We all know there’s nothing better than the summer home-grown tomato, but let’s be practical. The most dependable fresh tomato year-round is the meaty red plum tomato, although we also like the little yellow plums for variety. Another to consider for pizza is the sun-dried, with its wonderful concentrated taste. Sun-dried tomatoes packed in oil can be chopped, diced, or cut into thin strips, and the rosy oil adds wonderful flavor when drizzled over the top of a pizza. You can also buy sun-dried tomatoes loose and pack them yourself in olive oil or plump them in hot water.
