Saturday night dinner in the kitchen was often meat loaf when we were growing up. Many years later, we’re still deciding whether it was best straight from the oven or the next day between white bread smothered with ketchup. Back then meat loaf was pretty standard stuff, but today it has become very chic as a great dish for playing with flavors. Meat loaf is just one of those foods we’re most comfortable with—but comfort, we’ve learned, need not be boring.
