This is another game bird people find tender and delicate. We think it falls some-where between chicken and pheasant and cook it often, very much like chicken. The hens at the market weigh between 2 and Vk pounds. They should be barded to protect the delicate breast meat and roasted. We like them best well-done, when the juices from the thigh run clear.
