To make a proper cup of tea you need a good teapot and loose tea. Fill a kettle with fresh cold water and heat it to a boil. Place the teapot near the kettle to warm. When the water nears the boil, pour a little hot water into the teapot, swirl it around, and pour it out.
Measure the tea leaves—one heaping teaspoon per cup and one for the pot—into the teapot. As soon as the water boils, pour it over the tea. Stir quickly, cover the pot, and put it under a tea cozy or in a warm spot to steep for five to seven minutes.
