Now a very broad term, bitters pertains to all bitter liqueurs and, well, bitters. They are made from herb and root extracts as well as spices, predominantly from the calming components of tropical and subtropical plants. Originally created and sold as “patent medicines,” these unique tinctures have found their home alongside aperitifs and digestifs. Bitters are widely used to increase a cocktail’s complexity by adding flavor and balancing ingredients.
