A neutral grain spirit that is traditionally flavored with various botanicals, herbs, and spices, including citrus peels, coriander, cassia, anise, angelica root, cardamom, and, most important, juniper berry. It has embodied different adaptations since its conception by the Dutch in the 1600s. Today, the most popular is the London Dry style. For our purposes, we chose The Botanist gin from Scotland for our London Dry, due to its quality and flavor. Another style that is increasing in popularity is the New Western style of gin; Junipero from San Francisco is an excellent choice. As with many other spirits, choosing a quality gin is extremely important, if not mandatory! Otherwise, you will be the victim of a severe hangover.
