Historically the name was synonymous with pasta when it first made its appearance in the aristocratic courts of southern Italy. Now maccheroni refers to a straight-edged tubular pasta, which like penne can be either smooth or ridged. Many sauces that are good with penne are also good with maccheroni. IDEAL PAIRINGS: Maccheroni with Pancetta and Ricotta; Maccheroni with Tomatoes and Sage.
