Their name means “corkscrews,” but unlike the short fusilli, they are hollow inside, somewhat like an enlarged section of the long fusilli. Their twisted shape wraps itself around chunky vegetable sauces wonderfully, and they are also great in certain hearty soups. IDEAL PAIRINGS: Vegetable Soup with Pasta; Egg Drop Soup with Zucchini, Amalfi Style.
