Young, unripe jackfruit is increasingly used in plant-based cookery due to its meaty texture and neutral taste; with the right marinade it can imitate pulled pork, slow cooked beef, or shredded chicken. You can find it in tins in most large supermarkets – Summer Pride is my favourite brand. Some tinned jackfruit is tougher than others, and will need a good salty boil to tenderize it before using.
