You can cook either the whole artichoke, as shown below, or just the heart. Both are delicious.
Break off the artichoke stalk at the bottom, pulling out the fibres that attach it to the base.
Pull off the outer leaves and place the artichoke in a pan of boiling salted water with the juice of 1 lemon. Weigh down with a plate and simmer for 20–35 minutes.
Test for doneness by pulling at one of the leaves. If it comes away easily, the artichoke is done. Cut off the top half of the artichoke and discard.
