This tasty, thick-leaved green travels under the various names above and a few other animal-linked names, as well as some notably unappetizing British ones: muckweed, dungweed, and dirty dick. Happily, the vegetable itself is as delightful as its names are off-putting. Because goosefoot and pigweed are names shared by numerous other plants of the genus Chenopodium, it makes sense to stay with lamb’s quarters if the green you mean is the one whose top leaves are pictured here. By the way, it is no relation of lamb’s lettuce (mâche or corn salad).
