These meaty, flavorful species are much admired in Europe and well distributed in North America, but few commercial foragers pay them heed. Amateurs seem to seek them out, however— with gusto. Of the American Lepiota species (procera, americana, and rachodes), David W. Fischer and Alan E. Bessette write in Edible Wild Mushrooms of North America, “These three Lepiota are delicious edibles.
