The vast and complex range of chillis deserves volumes. Happily, it now has them. Beginning in 1984 with the publication of Peppers: The Domesticated Capsicums by Jean Andrews, there has been a succession of guides and cookbooks, notably her several subsequent volumes and the countless popular articles and books by Dave DeWitt. A few of their relatively recent books are Red Hot Peppers and The Pepper Lady’s Pocket Pepper Primer (both by Andrews) and Peppers of the World (by DeWitt and Paul W. Bosland) and The Chile Pepper Encyclopedia (by DeWitt). Look to these for Capsicum information.
