Blue-fleshed potatoes: Caribe

Large, rounded; silvery-violet skin; white flesh. Steamed, it may range from creamy-waxy, smooth, with sweet delicate flavor to merely ordinary. Baked has a pleasant one-note effect; mashed has a light, fluffy consistency, both floury and moist. Note that the skin offers no advantages: It tastes metallic and turns grayish.
