Small to large, round to oval; smooth tan skin; fine yellow flesh. Steamed, it is golden, with a warm, creamy-smooth texture and sweet scent; also fine for salads (peeled). Baked is golden-skinned, rich yellow, at once moist and flaky, smooth and fluffy; balanced, rich flavor and sweet-dough aroma. Thin, chewy skin. Cook all ways.
