Carnival squash and other trademarked names (Cucurbita pepo) looks and tastes like what it is: an Acorn and Sweet Dumpling cross. Flattened, but similar in size and shape to Sweet Dumpling, it also has its attractive ivy green marbling. The deep yellow, rather loose-knit flesh is sweeter and more flavorful than Acorn’s—in fact, much closer to Sweet Dumpling, with its hints of corn and vanilla. The texture is a bit coarse, but not stringy—-just chewy. A good substitute for the failing Acorn.
