Pale, moist, soft sweets are generally close to traditionals in texture and sugar but have beige skin and white-to-yellow flesh. They appear erratically at local markets, generally in California, New Jersey, North Carolina, and Virginia. Connoisseurs in North Carolina go out of their way to buy the firm, waxy Nancy Hall with its honey flavor; traditionalists in and around New Jersey seek out the Jersey Yellow and Jersey White. Golden Sweet, Batas, and O’Henry are others that appear in farmers’ markets.
