Summer truffle (Tuber aestivum) has become a major player in the truffle trade over the last few years, despite its relatively light perfume. Although its black exterior and impressive size mimic T. melanosporum, its interior is pork-pate beige and white and its flavor is pale. But high quality summer truffles have a nutty, woodsy mushroom flavor and an appealing crumbly, crisp texture. It’s this texture that makes them desirable—provided they’re used raw in good volume. Chefs usually boost the flavor by adding black truffle oil.
