Yautía/malanga blanca (Xanthosoma sagittifolium) is by far the most common market type in the United States. This is what is generally meant when the term yautía or malanga is used on its own. It varies from lightly earthy and waxy to mild and smooth as creamed potatoes—a distinct and unpredictable textural range.
