There are three main types of peas: English peas, snow peas, and sugar snap peas. Only the pea seeds of English peas are edible—their pods are too tough to eat. Snow peas are flat, with underdeveloped peas, and the pods are eaten whole. Sugar snap peas can be eaten whole with their tender pods, and their peas are bigger than snow peas. The young tender leaves and sweet flowers of the pea plant are also edible and great in salads and as garnishes. Dried peas are very popular in Indian cooking; they are used to make dals and dishes like the Goan Pea Curry.
