Vegetables are great natural substitutes for meat and seafood and can be found in these recipes: Sampan Congee, Black-Pink Pepper Cabbage Steak, Sweet & Sour Cauliflower, Typhoon Shelter Celeriac, Curry Puffs, and Siu Mai. Sweet potato purée is a good subtitute for eggs in Lava Custard Buns and “Egg” Tarts. To make the purée, peel and chop sweet potatoes in 1 in [2.5 cm] chunks, and steam in a steamer basket on medium-high heat over 2 in [5 cm] of water for 15 minutes or until fork-tender. With a food processor or blender, purée and let cool.
