Place roughly chopped chocolate in a small heatproof bowl and set over a saucepan of simmering water over medium-low heat. Make sure the bottom of the bowl is not touching the water. Stir gently with a heatproof spatula until melted. Alternatively, melt the chocolate in a microwave-safe bowl on high power in 20-second intervals, stirring the chocolate after each interval, until smooth.
