Dum is a cooking method that involves cooking with the use of steam. It is the most commonly used method for cooking rice. Putting rice on dum means that when there is little water left in the cooking pot, and the rice is almost 80% done, cover the pan with a tight lid. Then lower the flame to the minimum and let the rice cook in the steam for 10-15 minutes.
