Suck on one of these as a digestive, the perfect end to a rich meal. Layer white sugar lumps in a jar with fresh mint leaves. Add a scattering of fennel seeds and a few peppercorns. Pour over enough food-grade ethanol (at least 90 per cent proof) to cover. Store for a month or longer in a dark cupboard. Serve on a spoon, light with a match then quickly blow out the flame for a milder alcohol hit.
