To peel, cut out the stem end of the tomatoes with a small knife, plunge them into boiling water for 30 seconds, then refresh in cold water and the skin should peel off easily. To seed, halve tomatoes horizontally and gently squeeze each half over a sieve placed over a bowl, removing seeds but capturing the juices in the bowl.
