A perfect peach is easy to peel, but unless you have your own tree, a perfect peach will be almost impossible to find. Score the peach from top to bottom along the groove, then blanch using the same method as for tomatoes. If, however, you want to poach your peaches in sugar syrup, leave the skin on, to give a better colour to the peach and syrup. Remove the skin just before serving.
