Cocoa amaretti cream

Mix 1 tablespoon unsweetened cocoa powder, 1 tablespoon granulated sugar and 1 tablespoon amaretto liqueur to make a paste. Whisk with 250ml (1 cup) double (heavy) cream to soft peaks then fold through a crumbled handful of amaretti biscuits. Save a few crumbs to dust over the top.

Match with: dark chocolate tarts or mousses
