Cold cream whips the lightest, so either chill the bowl or hold a bag of frozen peas around the edge as you beat. Combine with sugar and spices first, adjusting the sweetener to taste and thinking about what you will be serving it with. Start whisking at a low speed, increase to higher and stop as soft peaks form. You can do this at the last minute, or up to 24 hours in advance and chill in the fridge. To serve up to 8 people as an accompaniment, 250ml (1 cup) of cream should suffice.
