Refined white sugar is indeed used in modern Veracruzan cooking, especially for confectionery. Yet even today you will notice that the whitest sugar of Veracruz has a tiny hint of tan, indicating that a vestige of molasses remains. It is also just fractionally moister and stickier than ours. This is a distinctive preference inherited from the past.
