Can I cook risotto in large quantities in the same way?

Yes, doubling or trebling risotto amounts does not affect the cooking time. At La Cacciata we frequently do it for 30 people, and it takes approximately 35 minutes. Remember you will need a suitably large pan and that the rice expands threefold during cooking.
