When using agar-agar flakes as a substitute for gelatine, follow the instructions on the packet โ€“ the equivalent quantities given in the recipes are approximate

Raw Eggs Some recipes in this book contain raw eggs. Because of the danger of infection in eggs from salmonella bacteria, however, we recommend that raw or lightly cooked eggs are not served to pregnant women, babies, small children, elderly people or anyone with an immune-deficiency disease.
