Cakes and desserts are much loved by the people of the Baltics — something they share with both their Scandinavian and Polish neighbours. I put it down to climate, with those who live further south in the region less obsessed with sweet treats than their northern counterparts. Somehow, snowy days and cosy dark nights call for hot drinks and comforting cakes. In the balmy days of high summer, on the other hand, desserts tend to contain an abundance of seasonal fruit.
