Just as the ocean’s waves are a foretaste of the deep blue beyond, so a region’s food reflects something more profound than its obvious, everyday aspect. Through the simple act of cooking and eating, we can gain access to another culture. I am always touched when strangers open their homes and hearts to me. It’s one thing eating a beautifully prepared meal in a restaurant, but quite another being in someone else’s home, exchanging stories and feeling the warmth of hospitality. The Baltic restaurant and the Baltic home are two different worlds, yet their aim is the same: preserving heritage. In creating the recipes for this book, I have been greatly inspired by both.
