THE FIRST TIME I WALKED INTO THE HIGHLANDS BAR & GRILL IN BIRMINGHAM, Alabama, I found Frank Stitt at a tasting of great white Burgundies, overseeing the beginning of the regular Tuesday night martini fests and explaining one of the new dishes for the evening to the staff. Well, I thought, if great wines, martinis, and Gulf flounder stuffed with line-caught (gigged) blue crab are part of the American Southeast region, I had come to a place after my own heart.
