You’ll want to use European-style butter, which has a higher fat content (83 to 86 percent butterfat) than conventional American butter (81 to 82 percent butterfat). Fat carries flavor, so your cookies and brownies will be richer and have more pop. Choose unsalted butter, as this will allow you to control the amount of salt you use in your recipes.
