Adelina Pandelet and Victor Marin opened Alboronía in 2013 in the shaded patio of an artisan center, just off the beaten track of central Jerez. Unusually, Adelina’s background combines catering school with a degree in art history, specializing in Islamic art, while Victor inherited expertise on flamenco from his father, a flamenco writer. “For years I worked in Seville, also in Holland,” Victor recounts. “But at one point became unemployed. Living with Adelina I thought, I have a cook with me, so let’s open a tapas bar!” This they did successfully in a small town outside Seville before moving back to Victor’s hometown of Jerez to shift to a more ambitious scale. In 2019, Alboronía moved from its original patio to a stylish, cozy setting in the historic center.
