All these sauces can be used by themselves or as a base for more elaborate dishes. They can all be made in advance and stored in the refrigerator for up to 4 or 5 days, or frozen. The two meat sauces (ragù) are perfect for short or homemade pasta, while the tomato sauces are better for spaghetti, linguine or any long pasta. All the sauces are for dressing 350g/12oz of pasta, 4 first-course helpings.
