Unlike many of their preserving pantry kin, salsas, relishes, and chutneys are chunky rather than smooth. They invariably burst with bright tastes and colors, thanks to the combination of robust flavors and textures, such as tomato and garlic, ginger and cranberry, rhubarb and mint.
