The truth is I was never really a fan of your average sickly-sweet buttercream. So we developed a method to make tasty, smooth, easy-to-work-with buttercream that works for cupcakes, loaves and layer cakes. This recipe is guaranteed to make piping cupcakes or icing layer cakes much, much easier — that’s a promise! Douglas (Mr Bad Girl, who is not a baker) makes the very best buttercream every time, better than any of us bakers.

We’ve also included a version using plant-based butter. The method is exactly the same but there are a couple of tweaks to make it rich and smooth. Our head baker, Toni, absolutely loves vegan buttercream and prefers it to the dairy version. If you’re a regular baker you’ll notice this isn’t a standard buttercream ratio, which is usually double the weight of icing sugar to butter. Ours has less sugar and it makes a soft, really tasty, smooth buttercream that isn’t as sweet. Use this Basic Buttercream recipe — vegan or dairy — as a great base that you can flavour depending on what you’re baking (some ideas for variations).
