Rachel Knox, our bakery manager, is the most meticulous, neat and precise baker I’ve ever met. She is the queen of Millionaire Shortbread. Darren Campbell, our head chef, makes the best burger I’ve ever tasted and is responsible for our savoury menu revamp. He, Toni and Rachel helped so much in the writing of this book, from their fantastic ideas to their unwavering enthusiasm and never rolling their eyes when I came up with yet another recipe for them to try.
