How to Make Meringue Cookies

This recipe makes a lot of meringue. You can pile the meringue high on your tarts, or you can make easy meringue cookies: Preheat the oven to 200 degrees F., drop meringue by heaping tablespoons onto a parchment-lined baking sheet, and bake for 90 minutes, rotating the baking sheet halfway through the baking time. Turn off the oven, crack the door, and leave the meringues in the oven overnight. For extra-fun meringues, fold ½ cup semi-sweet chocolate chips into the meringue mixture before dropping it onto the baking sheet.
