Baked, the coffee shop and the bakery, opened its doors on January 11, 2005, in the vast industrialized section of Brooklyn called Red Hook. However, long before Baked opened and long before we even had an oven or a mixer in place, we had an idea.
The idea was both simple and daunting. We wanted to create “the” classic American bakery in a city swarming with hundreds of delicious bakeries, and we wanted Baked to be the best in its niche. We wanted to serve the best coffee with the best slice of cake and have it served by a well-informed counter person with a warm smile (if you are not already aware, New York City counter people are not big on “warm smiles”).
